How Important is Coffee Brew Water Temperature?
Santa Cruz-based Verve Coffee Roasters examines the importance of precise water brewing temperature for coffee extraction. Water boils at 212 degrees F, and we've recommended waiting for the water to cool to between 195 and 205 degrees before pouring on your grounds. Verve's testing shows that waiting 30 seconds before pouring doesn't significantly affect temperature--preheating your brewing vessel has more of an effect.
